Ingredients:
- 1 cup of corn
- 1 cup of hard tofu (cut into 1 cm cube)
- 1/2 green capsicum (diced)
- 1 red chili-pepper (finely chopped)
- 1 shallot (thinly sliced)
- 2 eggs (beaten)
- 1 cup of rice flour
- 3 tbsp Thai fish sauce
- 1 tbsp light soy sauce
- 2 Khaffir lime leaves (remove stems and sliver)
- 1/2 tsp turmeric powder
- oil for frying
How to:
- mix all the ingredients except the rice flour in a big bowl
- slowly add the rice flour and stir till the mixture has thickened
- heat the oil in a frying pan (~1 inch deep) for about 5 minutes
- take a spoonful of the mixture and fry till golden brown
- serve for 2
